Consider time and temperature

USDA advises no more than two hours at room temperature for perishables, or one hour above about 32°C. It describes cold storage at or below about 4.4°C and hot holding at or above 60°C. Guidance These converted US thresholds are not a guarantee of safety until a deadline. Do not rely on appearance or smell when safe storage is uncertain.

Prepare cold sources

For perishables, USDA recommends an insulated bag with at least two cold sources, placed around the food, and refrigeration on arrival when available. Packing guidance A bag’s name does not prove its temperature. Hot food needs suitable holding too; choose another meal if safe storage is unavailable.

Record after checking safety

Check whether planned refrigeration happened, especially if lunch was delayed. Do not eat uncertain food merely to complete a record. Log the meal safely eaten and review estimated foods and portions. A picture cannot assess food safety. Use official guidance for storage questions and seek care for significant symptoms. Include travel as well as time at your desk.
